Easter feast
The drive to make life meaningful…to have a purpose.
I’ve been thinking about this, and find a major purpose right under my nose: food and cooking. For example, my Easter dishes, vegan and oil-free, supplementing a family dinner where there were already going to be lots of dishes served.
I find this kind of cooking creative. And meaningful. Not for everybody, but since when does one person’s purpose have to be generally applicable? I do have a yearning to share this style of cooking with others, in person. It can be problematic to do something as simple as sharing a meal with other people. I don’t find that many people are interested. It’s enough to just do it for me and my partner, for now.
The carrot cake recipe is from My Quiet Kitchen, a cooking blog I follow. When I got ready to take photos, the cake looked so plain, so I dressed it up for the photograph with the only flowers I could find – falling tulip petals. Just the touch it needed. (I took them off before eating.)
And two more dishes, a tofu quiche and a broccoli salad with white beans, dates, and almonds. I started cooking on Friday, after making a master plan, and everything fit in easily. It was fun. It tasted good. And there are leftovers in the fridge.
My son and DIL are vegan and carrot cake has been one of his favorites since he was young. I sent him the link, but the broccoli salad link didn’t work. I love broccoli!

The carrot cake recipe is a good one, I think. I tried to fix the broccoli salad link. It’s by Hetty Lui McKinnon, who’s a very interesting cook IMHO.
The food looks beautiful. I’ll be checking My Quiet Kitchen. My husband and I are vegetarians so I’m always interested in good recipes. And I love leftovers!

It all looks so good .. very festive! I love your patience and interest in being vegan .. I would never have the full support of my family but I’m learning more and more to prepare meals with less meat and more vegetables. I feel like you would be an excellent teacher .. it seems to me you’re very kind and patient.
Thinking about holidays – we don’t celebrate with colored eggs and baskets of candy anymore, so – food it shall be!
